Emma O’Neill-Parsons and Olly Parsons

A bit about Olly:

i want to push boundaries with my brewing

Trade: Professional Brewer (formerly home brewing enthusiast) and currently Head Brewer at Merakai Brewing CO. I started my career at Arundel Brewery, and while there I was given the freedom to create some of their best-known and loved beers: Dragon Fly, Blueberry Imperial Berliner Weiss, the Clockwork Range, the Imperial Maple Stout and Maple Stout to name a few. I was also Head Brewer at Abyss Brewing for a time.

Favourite brews: Secret Stairs and Double Dry Hopped Summer Street from Trillium, Double Mosaic Dream by Other Half, Green is Good by Arundel and Triple Hopped, Straffe Hendrik Brugs Quadrupel bier 11 and more I can’t think of right now.

Favourite Merakai Beer: ‘We Like You Berry Much’ It’s our first collab, and I love fruited beers, and this one has given me the chance to experiment. I think it turned out alright.

Favourite place to drink beer: Tiny little craft beer bars in Tokyo, crushed into the tiniest of spaces.

Why Merakai Brewing CO. and why now? It was time, I got to a point in my career where I wanted to see what I could do for myself. Emma came to me with the idea, and made me do it, pretty much! I am a true craft beer and brewing fanatic, if I’m not brewing beer, I’m researching it. If I’m not researching it, I’m drinking it or talking about it (ask anyone that knows me and they’ll tell you). There’s nothing else I want to do in life, but learn, grow, develop, get better and brew the best possible beers for Merakai Brewing CO. that can stand shoulder to shoulder with some of the best producers in the world. I am confident that the beers we’ll be putting out will be the best brews I’ve ever produced.

A bit about Emma:

I believe in the power of community

Trade: I am a Marketing professional by trade with experience within media, tech and finance industries

Favourite brews: I’ve got an eclectic pallet. I’m obsessed with Vault City Brewing a particular favourite is Pineapple Habanero - sour fruited deliciousness and smoked beers are a real treat. Belgian beers are my thing however, and the likes of Westmalle (tripel and dubbel), Brugse Zot (blond and dubbel) and Duchesse de Bourgogne are firm favourites.

Favourite Merakai Beer: Our Helles ‘How’s Your Head Hun?’ so easy drinking, I love it and Right Before Your Berry Eyes, our Blueberry Frose

Favourite place to drink beer: Bruges, those that know me, know that I love Bruges.
